Congratulations to Sweden winning the overall Gold medal at World Culinary Olympics 2012!
The International Culinary Exhibition, well-known to most as the “Culinary Olympics”, was held in 1900 in Frankfurt for the first time. Since then the contest has been organized every four years.
This year in Erfurt chefs from 54 countries were put to the test of creating:
- A cold buffet-type table consisting of over 30 dishes and menus presented in a 12 square meters large table where a large sculpture in chocolate and/or sugar is the glorious centrepiece.
- A hot three-course meal that can feed 110 guests, cooked from scratch in the competition kitchen of six chefs and pastry chefs in 6, 5 hours.
I had the opportunity to try Team Sweden’s three-course menu a couple of weeks ago. This is what it looked like.

Sour cream pudding with raspberry sorbet, autumn raspberries, yoghurt meringue, almond cake flavored with raspberry schnapps & warm raspberry tartelette with browned butter foam
